Three Healthy Breakfast Ideas For You!

When you have a sweet tooth like me, finding ways to satisfy this AND be healthy can take some exploring. I am going to share three recipes that are delicious, gluten, sugar and dairy-free that are fast and easy to make. Try them out and let me know what you think!

1. My Favorite Healthy Pancakes

This is my go-to favorite breakfast that I eat almost every day.  I find it soooo delicious and it takes less than 5 minutes to make. It is high in protein which helps with blood sugar stabilization throughout the day. 

Ingredients:

  • 1 tablespoon coconut yogurt
  • 2 tablespoons and a half of almond meal
  • 1 egg

Directions: 

  1. Mix everything together and heat a pan with coconut, olive oil or butter.
  2. Usually it makes 3 perfect round small pancakes that are enough for one person so if you want to make more, then double or triple the ingredients. 
  3. If you want to sweeten them a little bit I usually add 5 drops of liquid monk fruit, it tastes better than other low glycemic sweeteners in my opinion. 
  4. Add some toppings such as what I do: a scoop of almond butter, and sprinkle of pistachios and 85% chocolate (I make my own that is also sweetened with monk fruit). 
  5. Enjoy and thank me later!

2. Banana Muffins with Chocolate Chips 

I usually cook these muffins on a Sunday night, they last 5-6 days and it’s my go to for breakfast if I have an early start and need something quick.
